Terrifying Chicken
Oh, it's so gorgeous.
The best thing about this chicken is how simple it is, it's really not terrifying at all! It came out really well honestly. This week has been a bit rough. We got our COVID boosters in this house so we ended up with headaches and body aches and slight fevers, so it's a good thing I made these early in the week to really enjoy them.
When I pulled the chicken out of the oven and arranged it on the plate (see above) I called my partner over to look who immediately laughed. We considered adding hair, but any food we added didn't look quite right, and adding real hair... felt like not a great option. But look at the little guy! Pretty good, right?!
The most important things with this recipe are to get the chicken as dry as possible, and don't leave out the baking powder. This is definitely one of those recipes that you could do multiple batches for a big party, or just a couple of servings for 1 or 2 by adjusting the size of the recipe. They've got a small kick, but even for the spice sensitive in this house, it was "just right!" Good for kids, and simple enough that it would pair well with whatever sauce you like on your wings. More on that in the substitutions and suggestions sections, but for now, let's get baking!
Ingredients
- 2 to 2.5 lb of Chicken Wings
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 2 Tbsp Baking Powder
You might be able to buy chicken wings with the drummets and the... other part (you know the part with the two bones) already separated from your grocery store, but ours came like the pictures shown below. It's pretty simple to separate them at the joints, but you will want a knife. Don't be afraid to really get your hands into the chicken to pull them apart, but be careful not to pull the meat off of the bones. It takes a bit of practice, but it's not too difficult.
We didn't coat and cook the tip of the wing. There's not much meat there and it's tough to eat, so that part was discarded.
Directions
- Separate the wings at the joints (if needed)
- Dry the chicken. On my lunch break, I cut my chicken apart and dried it with a paper towel, then let it rest on a plate (if I could do it again, I'd rest it on a paper towel) and stuck it back in the fridge until after work when I made it for dinner. But you can dry your chicken however you think is best for you, but this method worked for me. Remove as much moisture as possible.
- Preheat oven to 425. Mix the spices and baking powder in a small bowl
- Coat the dried chicken with the spice/baking powder mixture. You can either use a large bowl to do this, a plastic or silicone bag, or whatever your preferred method is.
- Place wings on a baking sheet with a cooling rack, or on parchment paper. I like the cooking rack because I feel like the heat circulates better, but parchment paper works too!
- Cook the wings for 50 minutes, flipping halfway through (at the 25-minute mark)
Tips, Suggestions, and Substitutions
Tips & Suggestions
- If 2 or 2.5 lbs of chicken wings are too much, you can halve the recipe and do just 1 to 1.5 lb. But, if you need to increase it, that's easy to do as well! Though I might suggest making them and coating them in batches to keep the distribution of spices more even.
- When making and baking these don't crowd the baking sheet. It's better to use multiple baking sheets and use multiple racks in your oven than to try and put too many onto one sheet.
- These also go really well with a sauce. If you enjoy a buffalo sauce on your wings you can dip them, or coat them once they come out of the oven. You can also do BBQ, hot sauce, or consider sauces from other parts of the world, and branch out. If you're doing a party you can do a whole sauce platter and let people try their favorites.
Substitutions
- These are meant to be a bit of a "basic" chicken wing. Easy to make, all you need is an oven and some time. This is another recipe where you can really make it your own. Try and keep the ratios about the same (about 4.5 - 5 tsp of spices for every 2lb of wings) if you can, but feel free to play around with some of your favorite spices.
- You can make taco wings if you substitute the spices above with 4.5 tsp of taco seasoning!
- You could also make lemon pepper wings. Get some lemon pepper seasoning, keep the salt and replace the rest with a dried lemon pepper seasoning.
- DO NOT substitute the baking powder. Get the baking powder.
In Conclusion...
This was one of those recipes that when we finished eating, we said we need to save this and make it again. The only real prep work was cutting and drying the chicken. Otherwise, it was just coat and bake. It was easy, they were really good, and there is lots of room to play around with flavors and combinations! And, it wouldn't be difficult to make for a larger group of people, overall, very pleased.
The recipe for this originally came from a blog, Dr. Davinah's Eats. I doubled this recipe to account for my 2 pounds of chicken and used regular salt, but otherwise mostly followed their recipe, and it was great!
