LIAM: No, we should probably stand up.
ROBBIE: Yep, hold on a second, wait. I'm going to like log-roll over to him. (laughter) And just slap my hand on his shoulder and cast level two Cure Wounds.

Emergency Healing Roll

I don't know about anyone else, but it has been a real heck of a week. I had another idea for this week's recipe but after my trial very did not turn out (it was not good, team), I had to scrap it and start over. I'm not giving up on the idea! But it's just not meant for this week. It will likely come up again in the future, and perhaps with more details, we can make it an even better recipe! So stay tuned.
Because I was having such a rough week, I need something rejuvenating. I need to work with basically what was on hand (or easy to get), and I needed to do it fast. I had to think like Dorian! On the brink of death, just revived, and looking out for his teammate, he rolls over to Orym and heals him. I mean... it was right there.
Yes. I know. This is not a roll. It's a muffin. But it's a breakfast pastry, so I hope you'll forgive it and allow for "close enough!" But it's got blueberries which are packed with antioxidants, vitamin C and potassium, all of the stuff you probably need when you aren't feeling your best, plus their blue, which I feel Dorian would appreciate. You can probably whip up this recipe in about 15 minutes, if you've got everything on hand and have all of your measuring cups easily accessible. And if you've got a mug, and a microwave, you have a muffin!
Ingredients
- 2 Tbsp butter (unsalted)
- 1/3 cup flour
- 2 Tbsp of sugar
- 1/4 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
- 1/2 tsp vanilla
- 1/4 tsp lemon juice
- 1/4 cup fresh blueberries
Directions
- In a small bowl melt the butter and set it aside. Note, if you need to cut your blueberries (I did they were really big) you'll want to do that now as well.
- In a standard coffee mug (I use a slightly larger one here because I have a lot of big mugs) add your flour, sugar, baking powder, and salt and mix well.
- In the bowl with your butter add milk, vanilla, and lemon juice
- Add your wet ingredients to your dry ingredients and mix well, I recommend using a fork.
- Add blueberries and mix again
- Microwave for 1 1/2 to 2 minutes, depending on your microwave strength.
- Let rest and cool for 2 minutes
Tips, Suggestions, and Substitutions
Tips & Suggestions
- If you want the muffin to come out of the mug (I like to eat it in the mug personally, but you do you), spray the mug and mix all of the ingredients in a separate bowl, then put them in the mug just before you microwave, it should pop right out.
- I felt like this muffin needed something - like a glaze. If you like your muffins sweeter, you can whip up a super quick sugar glaze with powdered sugar (aka confectioners sugar) and water. Since it's just one muffin start with a tsp of powdered sugar and slowly add water until it's a glaze consistency, then pour over the muffin! Plus it makes it feel a little more like a roll with a glaze.
- If you have sparkling sugar or even sprinkles, you could add a few of those to the top for a nice accent (especially if they're blue sprinkles), and to give it that sparkly muffin top look.
Substitutions
- You don't have to use blueberries, just about any berry (chopped up) will do, or raisins (or other dried fruit probably). I just like blueberry muffins and I wanted it to be a healer's muffin! Chocolate chips would also totally work though, just sayin'.
- You can use other flavored extracts but don't go too crazy. An almond extract would add a different interesting flavor profile. I would avoid mint though probably.
- You can also substitute the lemon juice for a tablespoon of lemon zest. Or just leave it out if you don't have any, it will still be good, the lemon brightens things up mostly.
In Conclusion...
It was pretty good! The top is a little sticky, but I find that true with most muffins, so not a complaint, just an observation. I don't know, with all of the sugar in it, I really thought it would taste sweeter. I like sweet muffins. But this will do in a pinch, and is a good option for morning sessions! I will also say - you can just buy this kind of thing in the grocery store. Just add the liquid and the pouch contents and you've got cake or muffin. But there's something just satisfying with doing it yourself - plus then you know exactly what's in it!
